The past year has provided us with many more opportunities to prepare meals at home. Some may have found this a welcome diversion while others may have found that it added more stress to an already busy life. In addition to strengthening family relationships, eating more meals at home is an important step toward eating healthy. A major issue facing North Carolinians is chronic diseases caused by obesity. When asked why we eat out so often and why we let other people cook so much of our food, the answer is often “I don’t have time to cook” or “I can eat out cheaper” or “it’s too much trouble to cook for just one or two people”. Dining out, picking up take-out, or popping a pre-made meal in the oven usually means larger food portions, more calories, more fat, and fewer nutrients. The negative impacts of a poor diet are many – a weakened immune system, chronic illness, and increased health care costs to name a few.

North Carolina Cooperative Extension’s Family and Consumer Sciences Program is committed to helping citizens choose nutritious foods and cook simple healthy meals for their family. The Cook Smart Eat Smart program, developed by NC State Extension, may be just what you are looking for to help get your family back on track to healthy eating.

The Cook Smart Eat Smart cooking classes keep it simple with basic ingredients and equipment, healthy cooking techniques, and simple recipes. Class topics also include knife skills, shopping tips, nutritional information, and keys to cooking smart. This program is for beginners and seasoned cooks alike. Discover new recipes, brush up on your culinary skills, and learn some fun kitchen hacks along the way.

The upcoming eight-session cooking series will be taught by Tracy Davis, Family and Consumer Sciences Extension Agent in Rutherford County, along with fellow Extension Agents from neighboring counties. These FREE virtual classes will meet via Zoom on Wednesdays from 11:00 a.m. – 1:00 p.m., February 3 through March 24. Register online through Eventbrite at go.ncsu.edu/virtualcses.
