NC Cooperative Extension is holding a series of home canning classes from 1:00 – 3:00 pm at the Currituck County Center of NC Cooperative Extension. Each class requires a $15.00 class fee. Check out the dates and descriptions below. Each class offers a hands-on experience!
2018 Class Schedule
Fermentation – March 23rd
Learn the science behind food fermentation and understand its safe application in products from vegetables to teas. You will also get to experience the first steps in starting the fermentation process.
Jams and Jellies – May 11th
Participants will learn how to make fresh produce into jam and jelly. Then will experience water bath canning first hand.
Pressure Canning – June 15th
Learn why a pressure canner must be used for some fruits and vegetables and how to safely pressure can fresh produce.
Salsa – July 13th
Participants will be preparing two types of salsa, Spicy Tomato Salsa and Papaya-Pineapple Salsa, which will be preserved using a water bath canner.
Fruit Butters – August 10th
Fruit butters are thick, smooth spreads flavored with fruit and spices. In this class, participants learn how to preserve and prepare apple and pear butter. Once the butters are made a water bath canner will be used to preserve them.

Payments can be made in person at the N.C. Cooperative Extension, Currituck County Center or by mailing a check made payable to “Currituck County” to 120 Community Way, Barco, NC 27917.
