N.C. Cooperative Extension, Currituck County Center is holding a series of FREE virtual home food preservation classes that you can watch at your convenience. Each class requires pre-registration to receive the YouTube link and class materials. Review the class offerings below to find out which class or classes you would like to view.

2020 Preservation Classes

Making Jam 

Learn the ins and outs of jam making so you can have delicious jam to share with your family all year long. We will be using a water bath canner to process this jam to be shelf-stable for up to a year.

Pickling 

Learn to pickle cucumber and other produce, which will be processed using a water bath canner. We will focus more on the process of making pickles or pickling in this class.

Salsa 

I will share with you my favorite spicy and sweet salsa that you can preserve using a water bath canner. In this class, we will focus on the aspects of using a water bath canner rather than the preparation of salsa.

Pressure Canning 

Pressure Canning can be really scary because your neighbor’s, grandmother’s, sister had her pressure canner explode 30 years ago. Join us as we take the fear out of pressure canning. As a reminder, a lot of vegetables need to be preserved under pressure. There is no equivalent for water bath canning.

And as a bonus – Anyone who signs up for any of the classes will receive information and a video on dehydrating fruit leathers! They are a family favorite.
