Taking the time to plan, plant, and tend to a garden can be very fun and relaxing. But what do you do when it comes time to harvest and you are up to your eyeballs in produce? Sign up for N.C. Cooperative Extension, Currituck County Center’s Home Food Preservation Series, and learn to can all the produce you harvest. Join us from 12:00 to 2:00 p.m. for a hands-on food preservation experience. Each class requires a $15.00 registration fee which includes canning goodies and recipes. April 13th Jam Making
Learn to make Strawberry-Kiwi Jam using powdered pectin. The principles for making this jam carry forward in almost all jam recipes. We will be demonstrating how to utilize a water bath canner to process the jars we prepare.
May 26th (postponed fromMay 18th) Pickling
In this class, we will focus on making quick pickles and then preserving them utilizing a water bath canner. We will also discuss how to safely use other methods of pickling and processing for pickled products.
June 15th Salsa
We will prepare a vegetable salsa and process it in a water bath canner. I will provide you with other recipe recommendations as well but this recipe is a great way to supplement your garden produce with other locally grown products.
We have additional classes coming in July, August, and September to include pressure canning, fermentation, and dehydration.

We are accepting cash and check payments in addition to paying via credit card through Eventbrite. Please, make checks payable to NCSU. Checks and cash payments can be received at the Currituck Extension Office located at 120 Community Way Barco NC 27917, within 5 days of registration. Class size is limited and full registration, including payment, is required to hold your spot.
