If you enjoy the science of fermentation, then join us for Fermentation Fridays! Each class will be held from 1 to 3 p.m. at the Currituck Extension Office. The fee for each class is $15.00. There is so much fun fermenting to do! Learn why these products are fermented, and how to care for them safely. Each class has a hands-on portion and in some cases, we will be preparing a product that you can ferment at home. Join us for one or both classes. Check out the schedule below.
Sauerkraut March 17th
In this class, we will get you started fermenting cabbage so that in just a few short weeks you will have homemade sauerkraut. This dish makes a great companion to hot dogs and bratwurst. If you are new to fermented food learning to prepare sauerkraut is a great way to get started!
Kimchi April 14th
Kimchi is a Korean dish of salted, fermented vegetables, often based around cabbage. It generally includes seasonings like garlic, chili, and ginger. It has a sour, salty, savory, and spicy flavor. In class, we will prepare the vegetables for fermenting and then pack them in a jar to be fermented at home. In just 5 days you will have delicious Kimchi to enjoy!
Yogurt May 19th
During this class, you will learn the science of yogurt making: the different types of yogurt, how they are made, and how to incubate yogurt. Then you will taste test the different types of yogurt made with different techniques and recipes.
